Neapolitan pizza is a special type of pizza and perhaps the most authentic. It is cooked in a wood-fired oven at a temperature of 400C for only 1.5-2 minutes. Thanks to this, a beautiful “leopard” pattern appears on the sides of the pizza.
The airy texture of the dough is the result of a long two-stage fermentation that takes place with the participation of a minimum amount of yeast. It ripens within 48 hours, acquiring a unique taste and lightness. It is believed that because of this, Neapolitan pizza does not spoil the figure.
